I collected
edible mushrooms in the forest! Honestly that was something completely new for
me, but apparently in the German forests every fall is possible to do it. It’s
not that easy because you have to know which ones are toxic and which ones you
can eat. Fortunately, a friend of my boyfriend is very experienced in this area
and he went to the forest with us to collect the right mushrooms for cooking a
delicious mushroom risotto.
INGREDIENTS
Olive oil2 small onions (finely chopped)
3 cups of rice
1 ½ glasses of white wine
1 kg of mushrooms (aprox.)
9 cups of vegetable broth
Salt, pepper, parsley, basil and oregano
Grated parmesan cheese (optional)
Heat the olive oil in a large pot over medium heat. Add the onion and sauté. Then add the mushrooms and spice up. Pour the wine into the pot and wait until the alcohol is evaporated to add the rice. Stir. Add the broth little by little, when the rice needs it and continue stirring. When the rice is ready serve immediately and if want serve it with parmesan cheese (ignore this if you want it vegan).
This recipe is delicious, simple and fast! Definitely, it is worth to try.
¡Recolecté hongos comestibles en el bosque! Honestamente fue
algo completamente nuevo para mí, pero aparentemente en los bosques alemanes
cada otoño es posible hacerlo. No es tan fácil porque debes saber cuáles son
tóxicos y cuáles son comestibles. Afortunadamente, un amigo de mi novio es
conocedor del tema y nos acompañó al bosque a recolectar los hongos correctos
para cocinar un delicioso risotto de hongos.
Aquí está la receta para preparar el risotto de hongos
vegano que cociné ese día. Los ingredientes mostrados fueron los utilizados
para alimentar a cinco hambrientos recolectores de hongos.
INGREDIENTES
Aceite de olivo
2 cebollas pequeñas (finamente picadas)
3 tazas de arroz
1 ½ vasos de vino blanco
1 kg de hongos (aprox.)
9 tazas de caldo vegetal
Sal, pimienta, oregano, albahaca y perejil
Queso parmesano rallado (opcional)

Calentar el aceite en una olla a fuego medio. Agregar la cebolla y acitronar. Luego agregar los hongos, freir un poco y condimentar. Verter el vino blanco y esperar a que se evapore el alcohol para agregar el arroz. Remover un poco. Agregar poco a poco el caldo cuando el arroz lo vaya necesitando y remover. Cuando el arroz esté listo, servir inmediatamente y opcionalmente con queso parmesano (ignora esto si lo quieres vegano).
¡Esta receta es rica, simple y rápida! Definitivamente vale la pena intentarla.
